CREAMY TUSCAN CHICKEN

This is a delicious, Italian-style dish that is sure to become a firm family favourite. The chicken is so creamy and tender and the tomatoes add a sweetness that’s sure to be a hit with the whole family.

Prep time: 20 mins l Cook time: 2-6 hours l Serves: 4 INGREDIENT­S 4 chicken breasts

250ml cream

1 red pepper, chopped

1 red onion, chopped

100g baby spinach

75g Parmesan cheese, grated 100g sun-dried tomatoes 20 fresh basil leaves

10 cherry tomatoes

½ vegetable stock cube

Salt and freshly ground pepper

½ tsp paprika

Oil for frying METHOD

1. Season the chicken with the salt and pepper and paprika, then fry in a non-stick pan.

2. Add the chicken, chopped pepper and onion to the slow cooker.

3. Pour the cream into the pan you cooked the chicken in and add the stock cube, Parmesan and basil.

4. Bring to the boil and pour it over the chicken in the slow cooker

5. Add the sun-dried tomatoes and cook on low for 4-6 hours or on high for 2-3 hours. Remove the lid for the last hour to allow the liquid to evaporate and the sauce to thicken.

6. Add the cherry tomatoes and spinach for the last 20 minutes.

7. Serve with creamy mash or pasta and garlic bread.
