Spilling the beans

- LUCINDA O’SULLIVAN

THE MILKY WAY

Wexford farmers John Joe Roche, above left, and Nick Doyle, above right, have banded together to produce their respective cow’s and goat’s milk. Fairfield Farm Fresh Milk was set up in 2013 when Nick installed his own pasteurisation plant. The milk is not homogenised, “leaving all the good stuff there”. John Joe Roche’s Meadowfield Farm Goat’s Milk is from his own goat herd, fed on a grass and herb diet, which is then pasteurised and packaged by Nick. John Joe started the business in 2015; he also makes goat’s milk soap, which is enriched with olive and coconut oils, to soothe dry skin. Fairfield Farm, tel: (086) 246-2814, or see meadowfield.ie

BACK IN ACTION

It’s good to see the historical Cahernane House in Killarney up and running again. Formerly home to the Herbert family, the estate goes back to the 17th Century. It’s now part of the Prem Group, and the new head chef is Paul O’Connor, who has created a delicious menu using local produce with luxurious twists. See cahernane.com
