What did your mother make? My nanny used to make us French Dinner Surprise — a mashed-potato volcano filled with soup! The surprise was that one of our plates had a picture of a bird under the volcano. What is the meal you will always remember? My fondest memories were trips to JFK Park in Wexford, eating warm salad sandwiches and melting Super Splits. What was your defining food experience? Cooking a roast for friends after moving away from home. What’s the first dish you ever cooked? I remember being told I could make butterscot­ch Angel Delight and inhaling the dust when I plopped it into the blender. That smell instantly transports me back to Enniscorth­y. What is your comfort food? Roasts; shepherd’s pie; rhubarb crumble. What is your hangover cure? Bacon on an onion bagel. What do you drink? White wine. If you could only eat three things for the rest of your life, what would they be? Corn on the cob; chocolate raisins; noodles with chilli, ginger and soy sauce. What’s the most appetising smell ? Bacon. You can go anywhere and have anything to eat with any one person. Where, what and who? Hash E8 in Dalston, London, with one of my Irish friends. It’s run by a gorgeous Irish couple, and their brunch menu is incredible. What’s your favourite restaurant in Ireland? Breakfast: The Cake Cafe. Dinner: The Trocadero. Guilty pleasure: Elephant & Castle buffalo wings. And abroad? Toronto: Lee. New York: Acqua, an amazing Italian place. London: Roka. What’s your sweet treat? I make a mean chocolate meringue and brownie cake. What’s your signature dish? I make a really good stew. My friend Dave’s mum’s recipe: Lally’s Stew. What do you refuse to eat? Mushy peas. Every Saturday night, my mum would soak them in water with what only could be described as a dishwasher tablet! What is your guilty pleasure? Coco Pops! What’s your perfect family meal? A Sunday roast. I live with friends in London, and we always make a big family meal on the weekends. We had fish pie last night. I’m making mushroom soup with truffle oil tonight.
