BANANA & PISTACHIO POPSICLES

Makes 4 You will need: • 2 bananas, peeled • 30g dark chocolate • Handful of pistachios, crushed 1 You will also need 4 wooden lolly sticks. Chop each banana in half (not lengthways). 2 Insert a wooden lolly stick into the bottom of each half to make 4 banana popsicles. Place them on non-stick parchment and freeze them for 4 hours. 3 Meanwhile, slowly melt the chocolate over a bain-marie. This is basically a pot of simmering water, 2½cm in depth, with a bowl sitting on top where a lid might otherwise have gone. The chocolate in the bowl will gently melt because of the steam underneath. The trick is not to let the water boil, or to let the bowl touch the water underneath. 4 Dip the top of each frozen banana into the melted chocolate and return them to the freezer for 2 minutes to set. If you’re feeling sophistica­ted, roll the chocolate banana pop into crushed pistachios before returning to the freezer.
