Louis Copeland’s Rosslare

Due to work, my weekend starts on a Saturday evening,

and even then, my wife Mary finds it hard to get me away from work at all.

My ideal weekend would be spent in Kelly’s Hotel in Rosslare.

I’ve been going there for 40 years. We’d relax there, and before dinner, I’d always have nice glass of red wine in the hotel’s Marine bar.

Dinner on Saturday will almost always be a steak in the hotel restaurant.

I’d have a glass of wine, but I’m not a big drinker, so I’d take it easy and just wind down.

On Sunday, I’d have the full Irish at Kelly’s, before Mass in Rosslare village.

I always try to squeeze in nine holes in Rosslare Golf Club, and a long walk on the beach to clear the head.

I love Wild & Native Seafood Restaurant in Rosslare,

for the atmosphere and the fresh fish. So we’d go there, but maybe have evening dinner in the hotel again, and just chill there.

If I’m away, I’ll take the day off on Monday and get the two nights.

On Monday morning, before checking out, I’ll treat myself to another fry, as I know I’ll be in the gym each morning for the rest of the week.

Then Mary and I will drive into Wexford town to grab a coffee in the Red Kettle, our favourite cafe.
