Simple quesadilla­s

Makes 8 wedges

You will need:

• 2 wheat flour or corn tortillas

• 100g grated cheese (I like a mixture of Cheddar, Gruyere and mozzarella)

• 1 spring onion, trimmed and thinly sliced

• ½ a green or red chilli, deseeded and finely chopped (optional)

• Tomato salsa, see recipe, above

• Guacamole, see recipe, above right

1 Put one tortilla in an unheated pan and sprinkle it with all the grated cheese, the thinly sliced spring onion and the finely chopped chilli, if using. Cover with the other tortilla and press down with a spatula or your hands.

2 Turn the heat to low underneath the pan and allow the quesadilla to cook for a few minutes. The cheese will have started melting at this stage, and the bottom tortilla should be golden brown. When it is, carefully turn the quesadilla over and cook the other side for another couple of minutes, until it is golden and all the cheese has melted.

3 Transfer the quesadilla to a board and cut it into wedges. Serve immediatel­y with the tomato salsa and the guacamole.

Note:

Some pulled pork or chicken would be delicious added into these quesadilla­s, as would some finely chopped chorizo and shredded spinach.
