Coffee kisses

For the biscuits, you will need:

100g butter, softened 100g caster sugar 1 egg, beaten 1 tablespoon very strong coffee, cooled 175g plain flour 1 teaspoon baking powder

For the coffee butter icing, you will need:

50g butter, softened 100g icing sugar, sieved 1-2 tablespoon­s very strong coffee cooled 1 You’ll also need two baking sheets, lined with baking parchment. Preheat the oven to 180°C, 350°F, Gas 4. In the bowl of a food processor, or in a mixing bowl, cream the softened butter. Add the caster sugar and beat until the mixture is light and fluffy. Next, beat in the beaten egg and the cooled very strong coffee. 2 Sift the plain flour and the baking powder together and add them to the mixture in the bowl, mixing to combine. This is a soft dough, so with lightly floured hands, shape a heaped teaspoonfu­l into a ball and place it on the lined baking sheet. Slightly flatten the dough ball with the tip of your finger. To make 12 sandwich biscuits, you will need 24 biscuit halves, so continue until you have the correct amount. They will spread a little, so leave a few centimetre­s of space between each one. 3 Bake the biscuits for 9-11 minutes, until they are just turning pale golden around the edges. 4 Next, make the coffee butter icing. Put the 50g of softened butter in a bowl and beat it thoroughly with a hand-held electric mixer or in a food processor, or by hand. Add the sifted icing sugar, and a tablespoon of the cooled very strong coffee. Mix well and add a little more of the cooled coffee to get the right spreading consistenc­y. 5 Sandwich the biscuits together using a heaped teaspoon of the coffee butter icing. To serve, put them on a serving plate or a cake stand.
