Alan’s Roast Pork Belly
Serves 6
You will need:
• Salt and freshly ground black pepper • 10ml olive oil • 4 cloves garlic, crushed • 1kg belly pork
To serve, you will need:
• Brussels sprouts, choucroute or turnip
1 Preheat the oven to 150°C, 300°F, Gas 2.
2 In a small bowl, combine the salt and freshly ground black pepper, the olive oil and the crushed garlic. Brush the mix over the pork.
3 Wrap the pork in tinfoil, leaving only the skin exposed on top.
4 Put the pork in a roasting tin and roast for 90 minutes.
5 Serve with Brussels sprouts, choucroute or turnip.
