Nothing captures the essence of summer like a Salade Nicoise. Screaming sun, sea, and salt, it’s the French Riviera on a plate. My perfect Nicoise would have little gem, anchovies, black olives, French beans, sweet quartered tomatoes, artichoke hearts, just-set boiled eggs, capers and baby potatoes, all napped with a good garlicky French dressing. Pictured right is the best I’ve tasted here; priced €14.50, it contained seared fresh tuna, and was served in The Heights Lounge at the fabulous Aghadoe Heights Hotel, overlookin­g the amazing lakes of Killarney.
