Although the French and the Spanish snaffle up as much of our fish as they can, we have always been a bit slow to appreciate our denizens of the deep. It’s down to a heritage of fishy Fridays and not quite knowing what to do with the slippery little divils unless they come battered or breadcrumbed. Happily, that appears to be changing, and great efforts are being made by chefs and fishmongers.
