Cormac’s Brown bread

Makes 1 loaf

You will need:

200g wholemeal flour 100g plain white flour 12g bread soda 30g pumpkin seeds 4g salt 1 egg 10g honey 300g buttermilk 60g water 60g rapeseed oil

Preheat your oven to 190°C, 380°F, Gas 5.

Lightly butter a loaf tin, measuring 20cm long x 8cm wide x 6cm high.

In a large bowl, mix together the wholemeal and plain flours, the bread soda, the pumpkin seeds and the salt.

In a cup, lightly combine the egg, the honey, the buttermilk, the water and the rapeseed oil. Then add this mix to the dry ingredient­s. Mix together well with a wooden spoon or spatula.

Pour into the loaf tin, leaving about a 2cm gap between the bread and the top of the tin.

Bake for 15 minutes, then reduce the heat to 150°C, 300°F, Gas 2. Bake for a further 1 hour. To check if it is cooked, tap on the bottom of the tin. If it sounds hollow, then it is done.

The bread should come out easily from the tin. Leave the loaf to cool on a wire rack.
