APPLE & HONEY CAKE

Serves 8-12 You will need:

• 225g butter

• 100g caster sugar

• 3 eggs

• 3 apples, plus extra slices to decorate the top of the cake

• Juice and zest of 2 lemons

• 100g honey

• 225g ground almonds

• 1 teaspoon vanilla extract

• 110g polenta

• ¾ teaspoon baking powder

• Pinch of salt

• Creme fraiche, to serve

Preheat the oven to 150°C, 285°F, Gas 3. Cream the butter and caster sugar together, then beat in the eggs, incorporat­ing each one fully before adding the next. Peel and thinly slice the three apples and toss them in a bowl with the lemon juice, the lemon zest and the honey.

Fold the apple and lemon mixture into the butter and caster sugar mixture, along with the ground almonds, the vanilla extract, the polenta, the baking powder and the pinch of salt. Line a 24cm round cake tin with baking paper and pour in the cake batter. Arrange the extra apple slices on top for decoration.

Bake the cake for 60 minutes, or until a knife inserted comes out clean. Allow the cake to cool, and serve it with a dollop of creme fraiche.
