Chocolate lava cakes

Serves 4 You will need:

125g butter, plus extra for buttering the ramekins 150g dark chocolate 3 eggs 3 egg yolks 75g caster sugar 50g plain flour 25g cocoa powder Cocoa powder or icing sugar for dusting 1 You will also need four 8cm-diameter ramekins. Preheat the oven to 180°C, 356°F, Gas 4. Butter the ramekins and place them on a baking tray. 2 Break or chop the dark chocolate and melt it with the butter in a heatproof bowl set over a saucepan of simmering water. 3 In a mixing bowl, whisk the eggs and the egg yolks with the caster sugar until the mixture is pale and fluffy. Add the melted chocolate and butter mixture, and fold it in to mix everything together. 4 Sift in the plain flour and the cocoa powder, and fold them in gently with a spatula. 5 Transfer the mixture to the prepared ramekins and bake the lava cakes in the oven for 8-10 minutes, or until they are risen and just firm to the touch around the outside, but soft in the centre. The outer part should be cooked, and the inner part should be liquid. Very carefully, run a knife around the inside of each ramekin to loosen the puddings, then gently turn them out onto individual warmed serving plates. Dust with cocoa powder or icing sugar, whichever you are using, and serve immediatel­y.
