Taste of success for McEgan pupil
SECOND level students from all over Munster and Leinster travelled to IT Tralee on Thursday to represent their schools in the final of Apprentice Chef 2018. And McEgan College was thrilled for TY student Jack Granville who took third place in this prestigious competition.
Jack’s dish in the Flogas Ireland and Fáilte Ireland-sponsored Schools Apprentice Chef Programme was a Roast Rack of Shandagan Lamb, with a Croquette of Lamb Shoulder, Hassle-back potatoes, Tian of Courgette and buttered Baby Spinach with a Red Wine Jus.
Jack sourced all of his quality ingredients from Macroom and iits environs. Local businesses aand producers were very helpful and supportive of Jack in sourcing the finest local seasonal produce. Suppliers that Jack used to create his dish included TTwomey’s Butchers, Caroline Robinson and McCarthy’s Vegetables.
This is the sixth year of the AApprentice Chef Programme which was established by Mark Doe of Just Cooking Cookery School and senior lecturer in CCulinary Arts at IT Tralee Mark MMurphy.
Co-founder Mark Doe said: “Since the programme’s inception in 2012, we have delivered a series of demonstrations and workshops to over 2,000 students. Our objective is to promote the importance of healthy eating to enhance physical and mental well-being and to encourage young people to consider a culinary career.”
