WHILE researchin­g ways to fix Geoff, we came across a scientific­ally proven diet devised by diabetes expert Prof. Roy Taylor at Newcastle University. The bestsellin­g book The 8-Week Blood Sugar Diet, by Dr Michael Mosley, is based on this research, and our plan sticks to the same simple rules:

For six to eight weeks, stick to an 800-calorie-a-day diet. We devised a selection of delicious yet low-calorie recipes, some of which are detailed on these pages. Breakfasts are all 130 calories, all lunches and suppers 260, and all snacks 60, leaving 90 calories spare for milk in tea or an extra side.

Cut refined carbohydra­tes. Out go bread, rice, pasta and sugar. Stick to surface-growing vegetables only – no root veg, but plenty of greens.

Alcohol is out for the first eight weeks. Drink water.

Make sure fats are the healthy kind found in oils, nuts and fish.

After six to eight weeks, stop counting calories and move on to a maintenanc­e diet by cutting back on carbs and unnecessar­y sugars.

To start with, Geoff found the regime difficult but lost five pounds in three days, which sharpened his resolve. After a few weeks he looked younger, and was much more energetic and enthusiast­ic. After eight weeks he went on to the maintenanc­e plan. Then, in February last year he received a consultant’s letter which, under the heading type 2 diabetes, said simply: ‘Resolved.’

With his doctor’s consent, he has come off all his diabetes medicine, although he still monitors his blood sugar.
