The Well Bred Butcher, Ardfert

-

WHEN you enter The Well Bred Butcher in Ardfert one is struck by the sense of creativity and passion for not only locally reared meat, local vegetables and honey harvested from Well Bred Bees, but also the environment and community with which it is based . The harmonious blend of land, animal and food is felt here in The Well Bred Butcher, seldom found in Butcher shops now. The creative spirit comes from Dingle native Peter Curran. Peter comes from a long line of Artisan Butchers and has used these skills around the world. That experience and heritage comes traditional recipes, knowledge and skilled Butchery. If you are looking for Handmade sausages and Home Dry Cured Bacon, old favourites like Corned Beef, Black pudding, Drisheen you need not look any further. There is nothing hidden or mass produced here. Peters sausage recipe has been developed with a mixture of family tradition, international influence and a healthy diet in mind. Peter also makes his own Dry Cure Bacon which is low in salt, has no phosphates, no added water and cooks like it should. The Well Bred Butchers lambs are from Peters flock which has been in the family for generations. The traditional breeds of cattle Aberdeen Angus, Herefords, are all locally reared and hand picked by Peter from neighbouring farmers. It is obvious when you talk to Peter he cares deeply about the food he sells and what he and his family eats, along with the community he lives in and contributes to.
