Naturally gluten free buckwheat pancakes

BUCKWHEAT is naturally gluten free and wheat free. It’s a fruit seed related to the rhubarb family, not a grain at all and is suitable for anyone that is gluten or wheat intolerant. I thought it would be nice to give you a recipe for a delicious buckwheat pancake. These are very easy to make and are much healthier than some pancakes that I have made in the past! You can put whatever topping you choose on top. For example, if you put almond or peanut butter on top instead of something sweet, you will have a much more nutritious pancake. They are very filling. You don’t have to wait until Pancake Tuesday to have them either, they are perfectly healthy to have every day.

Recipe adapted from The Little Green Spoon Ingredient­s: Makes four large pancakes

1 cup buckwheat flour gluten free; 2 eggs; 2 tablespoon­s honey/maple syrup or agave syrup; 2 tablespoon­s of Coconut oil, melted; 2 teaspoons gluten free vanilla essence; 1 teaspoon gluten free baking powder; Pinch of salt; 1 cup of milk of your choice- choose almond for a more nutritious pancake; Coconut oil for frying

These pancakes are so simple to make. Put everything into the food processor except the milk and blend until combined, then gradually add the milk until you have a thick but runny mixture. Add oil to your pan and heat until medium to high. Pour enough mixture onto the hot pan for one pancake. When the pancake is bubbling in the centre you can flip and cook until golden brown. Warm a plate and serve your pancake with the topping of your choice.

At your local health store, you can find buckwheat pasta, crackers, breakfast cereal, including buckwheat porridge which is a fantastic substitute if you can’t have regular porridge oats. Buckwheat is a natural source of manganese, magnesium, B12 and rutin which is great to improve blood flow and circulatio­n. It’s a super food to make your pancakes super healthy.
