Second AA Rosette for FARM Steakhouse Gorey

THE FARM Steakhouse in the Amber Springs Hotel in Gorey has received its second AA Rosette award.

The 2-star AA rosette is awarded to excellent restaurant­s that achieve high standards. A greater precision is apparent in the cooking and there is obvious attention to the selection of quality ingredient­s.

FARM Steakhouse is under the guidance of Executive Chef William Millar and Chef Tamas Varga, who serve seasonal and inventive dishes.

Owners of The Amber Springs Hotel and The Ashdown Park Hotel, Tommy and Pat Redmond opened the steakhouse in 2016 as the newest addition to the hotel’s dining portfolio. They serve steaks, along with other dishes, from Angus cattle that is reared on the Redmond farm that is close-by.

The 300 acre farm is where 500 Angus cross heifers are finished annually.

Alongside the Angus herd, potatoes and vegetables are grown for use within the restaurant. All tender vegetable crops such as lettuce, tomatoes and courgettes are grown in poly-tunnels. The hotel has a full-time horticultu­rist who nurtures growth for the hotels.

General Manager of the Amber Springs Eibhear Coyle is very proud of the AA Rosette award.

‘The key to success is to maintain consistenc­y in our dishes, reflective of the farm produce and giving the diner a great night out,’ said Mr Coyle. ‘Having consulted with the AA inspector we agreed sometime ago the key is to simplify and intensify, which we have focused on.’
