Storia di un successo familiare quella della Spezialbier-Brauerei FORST: una grande birra dell’Alto Adige. “La FORST nasce nel 1857, poi nel 1863 Josef Fuchs, il mio trisavolo”, racconta Cellina von Mannstein, quinta generazione Forst, “dà inizio alla dinastia. Dopo di lui, suo figlio Hans, e suo nipote Luis (mio nonno) faranno della FORST un marchio internazionale. Grandi uomini che, fin dall’inizio della storia, hanno avuto al fianco grandi donne, non solo come madri e mogli amorevoli, ma anche come attente imprenditrici. A mia nonna, Margarethe, oggi presidente dell’azienda, dobbiamo l’armoniosa architettura dello stabilimento e la volontà di mantenere Birra FORST un’azienda privata e ‘familiare’. diventare un’eccellenza? “L’imperativo è: mantenere, curare e apprezzare quello che si ha. Questo vale per tutto: gli edifici, le strutture, i collaboratori, il modello imprenditoriale, le tradizioni, la qualità. Un’azienda, se la tratti bene, trasforma tutti gli sforzi in grandi soddisfazioni. L’ultimo progetto, che si colloca sempre nella serie di lavori di rinnovamento, riguarda le antiche cantine di Birra FORST, dove nel XIX secolo venivano conservati i blocchi di ghiaccio. In queste cantine abbiamo realizzato un nuovo ristorante – il Felsenkeller – dove, assieme alle squisite pietanze, a impressionare gli ospiti sono anche la splendida architettura e il ricercato interior design del locale”. C’è un’Italia che le piace? “L’Italia è un Paese dal fascino senza tempo e trasmette una gran voglia di vivere. Per un periodo, negli anni ’90, i ‘bei ragazzi e le belle ragazze’ rappresentavano un modello di bellezza, che si captava ovunque: nel centro di Roma così come sul lungomare di San Felice Circeo. Quest’immagine dell’Italia, ‘pionieristica’, esempio nella moda, nel design, nell’architettura, mi ha sempre affascinata”. E l’Italia che non va? “L’Italia che non mi piace è quella che dimentica le proprie origini. Non mi piace che ci si dimentichi della regionalità. Io, nata in Germania, vorrei anche un po’ più di quella tipica precisione tedesca che di sicuro non oscurerebbe il ricordo della Dolce Vita”. I suoi luoghi ideali? “Il posto in cui passo più tempo è l’Alto Adige ed è anche dove mi sento a casa. Osservare il mondo dall’alto delle montagne mi regala uno sguardo d’insieme. L’aria e gli splendidi paesaggi mi danno ‘visioni’ che creano nuove concezioni. Ma ci sono molti altri luoghi, dove mi sento a mio agio… dal lago di Garda alle Marche, le splendide spiagge della Sardegna e le bellissime Roma e Firenze. L’Italia è piena di luoghi incantevoli, ogni posto che ho visitato mi ha regalato un ricordo speciale”.
The SpezialbierBrauerei FORST tells the story of the success of a family: great beer from South Tyrol. “Birra FORST was born in 1857, then in 1863 Josef Fuchs, my great-grandfather”, says Cellina von Mannstein, belonging to Forst’s fifth generation”, began our dynasty. After him, his son Hans, and his nephew Luis (my grandfather) turned FORST into a worldwide brand. Since the beginning, these great men have been accompanied by great women, not only as loving mothers and wives, but also as conscious entrepreneurs. Thanks to Margare- the, my grandmother, who’s today president of the company, we have the harmonious architecture of the factory and the desire to maintain Birra FORST a private company and ‘family’. Today the CEO is my mother, Margherita Fuchs von Mannstein, that continues to follow the tradition, made of dedication, foresight, prudent management”.
Is there a secret recipe to become an excellence?
“The imperative is: keep, care for and appreciate what you have. This applies to everything: buildings, facilities, staff, business model, traditions, quality. A
company, if managed properly, turns all efforts into great satisfaction. The latest project, which still belongs to the series of renovations, regards the old cellars of Birra FORST, where in the nineteenth century ice blocks used to be kept. In these cellars we have created a new restaurant – the Felsenkeller – where, along with delicious food, the stunning architecture and refined interior design of the halls will impress guests, as well”.
What is the part of Italy that you like the most?
“Italy is a country of timeless charm and conveys a great desire to live. During the ‘90s, the ‘handsome guys and beautiful girls’ used to represent a model of beauty that you could perceive everywhere: in the centre of Rome as well as on the seafront of San Felice Circeo. This image of ‘pioneering’ Italy, an example in fashion, design, architecture, has always fascinated me”.
And what about the part of the country you would like to change?
“The side of Italy I don’t like is the one that forgets its origins. I don’t like to miss the regionality, I was born in Germany. I would like a little more of the typical German precision that wouldn’t certainly obscure the memory of the Dolce Vita”.
Your favourite places?
“The place where I spend more time and also where I feel at home is South Tyrol. Observing the world from the mountains conveys me an overview. Its pure air and beautiful landscapes give me visions that create new concepts. But there are also many other places where I feel at ease... from Lake Garda to the Marche, the beautiful beaches of Sardinia and wonderful Rome and Florence. Italy is full of enchanting sites, every place I have visited has given me a special memory”.
