Visita a un locale che ha fatto la storia della ristorazione versiliese
Da sempre frequentato da personaggi noti e in vista, «La Barca è uno dei locali storici del Forte», come ci spiega Piero Petrucci, che lo gestisce dal 1969. «Esiste dal 1906 e tutti prima o poi passano da qui», aggiunge. Il filo conduttore, in cucina così come nell’arredamento in legno e vetro delle ampie sale, è la Forte dei Marmi marina, che fa capolino dalle suggestive immagini d’epoca appese alle pareti accanto alle foto di tanti personaggi. «Certo, un tempo si vedevano più intellettuali e meno calciatori; ma si sa, viviamo in un’epoca più modaiola», scherza Petrucci. Il grande forno a legna scalda l’atmosfera. Nella ve- trina refrigerata trionfa invece il pescato del giorno, freschissimo e di ottima qualità. Nel menù troviamo il cacciucco («siamo gli unici a prepararlo al Forte»), la pasta fatta in casa – ravioli, gnocchi, pappardelle –, le triglie, i coltellacci, le arselle. Piatti forti sono i ravioli di pesce con il tartufo nero e il crudo di mare. «In cucina c’è la tradizione locale, proposta con fantasia dal nostro cuoco. Ecco: tradizione e fantasia sono due parole che ci rappresentano bene». (Cinzia Donati)

В охлажденной витрине, напротив, торжествует улов дня, свежайший и только отличного качества. Меню ресторана предлагает каччукко (единственное место, где его можно попробовать в Форте), домашнюю пасту – равиоли, клецки, пеппарделле, а также барабульку и съедобный моллюск песчанку. Фирменным блюдом ресторана бесспорно являются равиоли с рыбой, заправленные черным трю- фелем, ну и, конечно же, сырые морепродукты. “В кухне мы придерживаемся местных традиций приготовления блюд, к которым наш шеф-повар подходит с некоторой долей собственной фантазии. результат? Традиция и креатив – это определяющие нашей работы”.
TRADITION AND IMAGINATION AT THE TABLE
A visit to a restaurant that wrote the history of dining in Versilia Farther back than memory serves, La Barca has been the choice of high-profile clients. In the words of owner Piero Petrucci, “For Forte, La Barca is truly historic. It was founded in 1906; everyone, sooner or later, has come through here.” The common thread, in the kitchen as in the decor of the spacious, woodand-glass dining areas, is the Forte dei Marmi harbor: its fish, and its image in period prints alternating with photos of famous patrons on the walls. The wood oven warms the ambience. The refrigerated case shows off the day’s catch of fresh, quality fish. The menu touts cacciucco fish stew (“in Forte, we’re the only ones who make it”), homemade pasta (ravioli, pappardelle noodles) and gnocchi; red mullet, razor clams, coquinas. Specialties are fish-filled ravioli with black truffle and the raw seafood plate. “In the kitchen, local tradition reigns, although our chef interprets it imaginatively.
