Mocha tortoni mousse

Ingredient­s: 1 egg white, beaten; 1 tbsp instant coffee; salt; 2 tbsp sugar; 1 cup whipping cream; 1 tsp vanilla; 1/4 cup sugar; 1/2 cup toasted slivered almonds; 1/2 cup chocolate, grated.

Method: In a bowl combine egg white, instant coffee, salt. Beat with an electric mixer until foamy. Add 2 tbsp sugar in a bowl and beat until foamy. In a separate bowl, whip cream until soft peaks, add vanilla and 1/4 cup of sugar. Fold cream into egg white mixture. Add slivered almonds and transfer to a bowl and freeze at least 2 hours. Garnish with grated chocolate.
