From the test tube contained liquid amuse bouche to starters of lomi lomi salmon and prawn siu mai, each dish is a unique interpretation of its wunderkind chef, Jeff Ramsey. More flavourful, artsy fare follows: The two-pronged kanpachi noodles; a light, fruity and refreshing palate cleanser of edible mai tai; airbread crab mousse and toro; steak sandwich featuring bread made from tomato water; the ingenious duck and coke; the straightforward unagi sunchoke; and the braised abura bouzo.
The Kagoshima A5 sukiyaki must be the jewel in this tasting menu’s crown as the melt-in-your-mouth Wagyu is served with chrysanthemum leaves and eringi mushrooms. The following ‘lie-mau’ dish sports an interesting visual illusion.
A sweetly satisfying deconstructed strawberry shortcake rounds out the one of a kind gastronomic journey.
