Obvious entrees of pan-seared foie gras and baked escargots give an introducti­on to the rich flavours to come. The foie gras is treated with just the right amount of heat, its aftermath neither raw or dried out. Likewise, for the garlic butter and herbs-infused escargot, which are satisfying­ly chewy.

Beef bourguigno­n, a much- loved traditiona­l French stew is perfectly cooked as the meat is tender and juicy, complement­ed with a red wine gravy that is good to the last lick. The flamed cured mackerel will delight seafood lovers with its lean cut smothered in an inviting citrusy sauce. A hearty country dish of ratatouill­e, featuring eggplant, zucchini, tomato, herbs, olive oil and other fresh seasonal vegetables is a healthy choice to balance out the proteins.

Desserts-wise, the Valrhona chocolate & raspberry moelleux is a pleasurabl­e molten lava cake paired with raspberry sorbet. Equally delightful is the mango tatin, having slices of succulent fruit caramelise­d and served with a refreshing mango sorbet.
