• An irresistible starter is the Hokkaido scallop and duck liver: it makes up for its diminutive size with two ingredients that pack a surf and semi-turf punch.
• Another unusual signature dish is the double-boiled tuna belly soup, a clear broth with silken tofu, tender leeks and of course, tuna belly.
