What is your all-time favourite dish?

I am a purist in the sense that I just love sink­ing my teeth into a good piece of steak, so it would def­i­nitely be a Ja­panese Kobe zab­u­ton cut, thrown on the grill and served with some good qual­ity sea salt.

What is your favourite restau­rant?

Asador Ex­te­barri in Bil­bao, Spain, where a smoke­house churns out the most heav­enly goat’s milk but­ter. Its grilled gam­bas mean­while, are juicy and ex­plode in your mouth, giv­ing you oral plea­sure that you never thought you’d yearn for.

Tell us about your most mem­o­rable din­ing ex­pe­ri­ence.

Not too long ago, I ran­domly jumped on a plane to Tokyo to sat­isfy my ra­men crav­ings. For the fol­low­ing 36 sleep­less hours, I had shoyu ra­men in Shin­juku, miso ra­men in Shibuya and chicken ra­men in Ginza, be­fore head­ing back to Kuala Lumpur.

fav­favourite roti canai in Desa Pan­dan and chchicken liver curry at my favourite ma­mak in Ukay Per­dana. I also of­ten visit my friends’ restau­rants Mezze and French Feast. I love food, so I only pa­tro­n­ise restau­rants on mul­ti­ple oc­ca­sions if the food is great.

Tell us about your most mem­o­rable din­ing ex­pe­ri­ence.

There are so many won­der­ful ex­pe­ri­ences but if I had to choose one, it would be at a friend’s Ital­ian restau­rant in Ocho Rios, Ja­maica. Al fresco din­ing un­der­neath the beau­ti­ful full moon with gor­geous truf­fle pap­pardelle, ex­cel­lent ser­vice, Chi­anti and the per­fect com­pany – my wife.
