The seared scallops appetiser is presented in a circular arrangement around a centrepiece of poached egg on top of a bed of parmesan potatoes. The taste of the scallops is clean and pure and for a dose of rich flavour, the parmesan potatoes is a pleasant accompaniment.
Guests are spoilt for choice with the Australian-certified or Australian prime rib or sirloin, oyster blade or filet mignon. First-timers can do no wrong with the Australian-certified Wagyu beef (marble score 9 and above) oyster blade steak. Another excellent choice is the Australian Black Angus — 200 days grain-fed filet mignon centre — which is best enjoyed cooked to medium perfection.
While the meats are best eaten without any sauces or sides, the sautéed spinach and truffle mashed potatoes are recommended for a more rounded flavour on the palate.
With its snazzy name — the fudgiest brownie ever — Prime’s specialty dessert is a crispy brownie with a heavenly moist centre, sprinkled with frosty sugar and served with a rich chocolate sauce.
