Many dishes come in three plate sizes; and couples or small groups will find small portions more than adequate. In addition to lobster, fish, prawns and crabs there are also poultry, ostrich, geoduck, vegetables, rice and noodle dishes.
Signature dishes include fried Boston lobster with cheese and baked meat crab with salted egg yolk. The fried bitter gourd with salted egg yolk is a wonderful combination thanks to the richness of the egg and the bitterness of the vegetable.
The fried bean curd is soft and tender and served with tasty minced chicken in a brown sauce. The fried broccoli with scallops meanwhile, is blanched to ensure tenderness and a melt-in-the-mouth sensation.
A novel way to savour the live tiger prawns is the salt and pepper style where the prawns are lightly floured and deepfried to lock in their freshness.
Desserts include tasty renditions of some Chinese standards such as chilled honeydew with sago, chilled mango with sago and sweetened longan with sea coconut.
