Like grandfathe­r, like grandson—chef Suppaiya Sivaraja’s career in the culinary arts was determined from the tender age of 12. Hailing from Nuwara Eliya, Sri Lanka’s tea country, Chef Siva signed up as a kitchen aid at Aliyaa and earned his stripes, eventually becoming head chef.
