IN Australia, Britain and Ireland, Pancake Day is celebrated on Shrove Tuesday. It’s the day before Lent, when Christians observe abstinence for 45 days before Easter in April.
The custom is to empty the pantry of all sugar, fats and eggs to avoid temptation and reduce waste. And what are these ingredients good for? Pancakes, of course!

According to legend, when the church bells rang for Shrove Tuesday service that day, a housewife had not finished cooking her pancakes and not wishing to ruin them, she ran to the church with pan in hand. In memory of this housewife, women in Olney compete every Shrove Tuesday in a 415yard (380m) race in which they must carry a pancake in a skillet.
