A Four Hands Din­ner

In the me­dieval city of Md­ina, the de Mon­dion Restau­rant at The Xara Palace Re­lais & Chateaux, raised the bar one more time and hosted a din­ner with a dif­fer­ence.

Last month, re­spec­tive guests were treated to a din­ner ti­tled “Four Hands Din­ner”. Renowned 2-Star Miche­lin Chef Vin­cenzo Can­di­ano, from Lo­canda Don Ser­afino Re­lais & Chateaux in Si­cily, was ac­com­pa­nied by In­fin­itely Xara’s Group Chef de Cui­sine Kevin Bonello. Din­ers were wel­comed with canapés and an aper­i­tif. A gas­tronome’s par­adise fol­lowed with a 6course menu with lo­cal and Ital­ian pro­duce in­clud­ing Red “Fake” Tuna with Sweet and Sour Tomato Ganache and Caper and Ex­tra Vir­gin Olive Oil Pow­der, Net­tle flavoured John Dory Spelt “Aljotta” and Sea Urchin, Saf­fron and Hy­blean Truf­fle Ac­querello Risotto, Caprino Goat Cheese and burnt Red King Prawn from Mazara, and Braised “Mtaħleb” Snail Ragout, Fen­nel Seed, Jerusalem Artichoke and Poached Hen Egg. Cof­fees and pe­tit fours were served af­ter the Mon­tezuma’s Sweet Sins Dessert made with hand­crafted choco­late from An­tica Dol­ceria Bon­a­juto.

This one-time event formed part of the Route de Bon­heur by Re­lais & Chateaux – the fel­low­ship of ho­tels of which both The Xara Palace and Lo­canda Don Ser­afino form part.
