SUSTAINABLE FARMING IN MONACO
You can visit the only sustainable farm in the principality, the gardens of which are located at the foot of the tallest skyscraper in Monaco, the Odeon Tower, and also on the roof of the conference hall of the Monte-Carlo Bay Hotel, by participating in the unique workshop arranged by resident of Monaco Jessica Sbaraglia, originally from Switzerland. She was the one who had the excellent idea of creating green oases on the flat roofs, balconies and terraces of the principality. Today, her Earth of Monaco project has been realised on a total surface area of 1,400 sqm. In her gardens, she not only grows vegetables and herbs, which are supplied to the kitchen of one of the best restaurants in Monaco, awarded with a Michelin star, but also keeps hens and a number of beehives. During the workshop, you can also taste herbal syrups, home-made jams, aromatic spices and honey.
