Pork ribs with sticky barbecue sauce

SERVES 4 PREP AND COOK TIME 55 MINUTES

1.75kg American-style pork spare ribs 1 cup (250ml) tomato sauce ¼ cup (60ml) extra virgin olive oil ½ cup (110g) firmly packed brown sugar 2 cloves garlic, crushed 2 tablespoon­s Worcesters­hire sauce 1 tablespoon apple cider vinegar 2 teaspoons smoked paprika

1 Bring a large saucepan of water to the boil; reduce the heat. Add the ribs; simmer, covered, for 40 minutes or until tender. Drain.

2 Combine the ribs and the remaining ingredient­s in a large bowl; season.

3 Cook ribs on a heated barbecue (or grill or grill pan) for about 15 minutes, basting occasional­ly with remaining marinade. Cut ribs into serving-sized portions. Not suitable to freeze or microwave.
