Christ­mas cake sun­daes

SERVES 4 PREP TIME 20 MIN­UTES (+ FREEZ­ING TIME)

1 litre good-qual­ity vanilla ice-cream, soft­ened 1 cup (200g) coarsely chopped fresh cherries ½ cup coarsely chopped gin­ger­bread ½ cup coarsely chopped milk choco­late 2 ta­ble­spoons maple syrup 1 cup crum­bled Christ­mas cake or pud­ding 250g straw­ber­ries, halved 125g blue­ber­ries

1 Place the ice-cream in a large bowl; fold through the cherries, gin­ger­bread, choco­late and maple syrup. Place in a loaf pan or plas­tic con­tainer and re­turn to the freezer for sev­eral hours or overnight.

2 To make the sun­daes, layer small scoops of ice-cream in chilled glasses with crum­bled cake and fresh berries. Suit­able to freeze. Not suit­able to mi­crowave.
