Eat­ing burnt toast could in­crease your risk of can­cer, ac­cord­ing to new re­search. When starchy foods are cooked at high tem­per­a­tures, a chem­i­cal com­pound called acryl­amide is formed and stud­ies on mice have shown that high lev­els of it can cause neu­ro­log­i­cal dam­age and can­cer. While stud­ies on hu­mans are in­con­clu­sive, the ad­vice when cook­ing toast is to go for gold, not black. The warn­ing also ap­plies to other over­cooked starchy foods such as pota­toes.
