Start recipe the night be­fore and leave pavlova in the oven overnight. Once the pavlova is dec­o­rated, it should be eaten within 2 hours. Store hon­ey­comb lay­ered with bak­ing paper in an air­tight con­tainer in a cool, dry place (hu­mid­ity will make it sticky) for up to 3 weeks.
