250g Padron pep­pers or small green cap­sicums (see Michele’s tip) 2 ta­ble­spoons ex­tra vir­gin olive oil sea salt flakes, to serve

1 Rinse the pep­pers un­der cold wa­ter; pat dry with paper towel. 2 Heat the oil in a large fry­ing pan or wok over a high heat. When the oil is be­gin­ning to shim­mer on the sur­face, add the pep­pers; toss for a few min­utes or un­til slightly charred. 3 Trans­fer pep­pers to a plate and sprin­kle with sea salt flakes. Serve im­me­di­ately.

Not suit­able to freeze or mi­crowave.
