Pimientos de Padron

SERVES 6 PREP AND COOK TIME 5 MINUTES

250g Padron peppers or small green capsicums (see Michele’s tip) 2 tablespoon­s extra virgin olive oil sea salt flakes, to serve

1 Rinse the peppers under cold water; pat dry with paper towel. 2 Heat the oil in a large frying pan or wok over a high heat. When the oil is beginning to shimmer on the surface, add the peppers; toss for a few minutes or until slightly charred. 3 Transfer peppers to a plate and sprinkle with sea salt flakes. Serve immediatel­y.

Not suitable to freeze or microwave.
