Chorizo is a cured, smoked sausage. It is avail­able from del­i­catessens and su­per­mar­kets. Jam­bal­aya is a clas­sic dish from Louisiana in the US, which tra­di­tion­ally in­cludes meat, sausage and rice. The chicken can be re­placed with pork or prawns, if de­sired.
