HOW TO CARVE A LEG OF HAM

STEP 1: Run the tip of the knife around the small bone at the opposite end to the hock. Begin to slice on a slight angle down to the bone. If the ham slices do not come away totally, run your knife lengthways along the bone to remove slices. Continue to slice towards the hock. STEP 2: Continue slicing down to the bone, working your way around the ham. When you’re about a third of the way up, you can remove the first small bone by making a few short cuts at the joint. Continue the process with the next bone along. Lay ham on its side and run the knife along the bone towards the hock end to remove the side of ham from the bone. Slice the piece thinly on the board. Repeat on the other side.
