CARAMEL CREME EASTER EGGS

Prep Time: 10 minutes / Cook Time: 10 minutes / Set Time: 1 hour / Total Time: 1 hour 20 minutes

Ingredient­s

1 Tbsp coconut oil

1 cup Changing Habits Cacao Melts

3 Tbsp maple syrup or honey (adjust quantity to taste)

Pinch Changing Habits Seaweed Salt Caramel Filling: 1 Tbsp coconut oil, 200ml coconut cream, 4 Tbsp maple syrup or honey

Method

Place the Easter Egg moulds in the freezer to chill.

Combine the coconut oil, salt, cacao melts and honey into a pan over a low heat, stirring continuous­ly until smooth. Leave to cool slightly.

Remove the moulds from the freezer and spoon the cacao mixture into each mould with a teaspoon so that it spreads quite thick and even along the edges. If it is too thin it will crack when removing from the moulds. Save a small amount of mixture to join the eggs when set.

Put in the freezer for about an hour.

Place all caramel filling ingredient­s into a pan on medium-high heat until mixture starts to bubble, turn down to medium for a further 5 minutes stirring occasional­ly until the mixture thickens.

Remove moulds from freezer and remove the eggs from the moulds. Spoon the caramel mixture into one half of the egg. Use the remaining mixture to join the two halves together and place back in the freezer to set.

Store in the refrigerat­or.

WHITE CHOCOLATE TREATS — 2 WAYS

Prep Time: 10 minutes Cook Time: 20 minutes Set Time: 1 hour Total Time: 1 hour 20 minutes

Ingredient­s

1⁄2 cup cacao butter

1⁄4 cup coconut oil

2 pinches Changing Habits Seaweed Salt 1⁄2 to 1 Tbsp honey

1 tsp vanilla essence or powder

4 Tbsp coconut cream (the thick part) 4 Tbsp coconut butter

Fresh berries for garnishing Toasted muesli for garnishing

Method

Add all ingredient­s to a small saucepan (except honey) and melt on low until completely melted and combined.

Remove from the heat and stir through the honey. Blend the mixture together using a stick blender to make sure the fats are emulsified together and won’t separate.

Pour the mixture into moulds or a lined container. Sprinkle fresh berries on top, or muesli as desired. Place in the freezer to set.

Store in an air-tight container in the fridge or freezer when they’re done. — Serves 2
