Do it yourself ‘filet-o-fish’ recipe a reason to serve up seafood DIY ‘FILET-O-FISH’ BURGER with TARTARE SAUCE

Seafood New Zealand is supporting the call to eat local and champion NZ seafood after the Ministry for Primary Industries forecasted a 1.4 per cent drop in seafood exports to the year ending June 2021.

Ingredient­s

400g firm white fish (large fillets) 1 cup breadcrumb­s, toasted

1 egg

1 Tbsp flour

1⁄4 tsp salt

1⁄4 tsp pepper

1 Tbsp Best Foods mayonnaise 4 burger buns

4 slices cheese

Tartare sauce: 1⁄2 cup Best Foods mayonnaise 1-2 whole pickles, diced

1⁄2 Tbsp lemon juice

1 tsp parsley

Pinch of sugar and salt Splash of pickle juice

Method

Preheat oven to 220C. While heating up, toast breadcrumb­s until golden. Cut fish fillets into squares, about the size of the burger buns.

Whisk together egg, flour, salt, pepper, and Best Foods mayonnaise. Dredge each fillet in the egg mixture, then coat with breadcrumb­s.

Bake for 12-15 minutes until crumb is golden. You can test one piece by inserting a fork, the fish should flake easily.

While the fish cooks, prepare the tartare sauce by mixing all sauce ingredient­s together. Taste and adjust seasoning accordingl­y.

Turn off oven, place a slice of cheese over each piece of fish. Return to oven for a minute to allow the residual heat to melt the cheese.

Slice open the burger buns and warm in the oven at the same time.

Assemble with the tartare sauce on the top bun. — Serves: 4
