Sweet Potato and Lentil Patties

Method
Preheat the oven to 180C. Line a baking tray with baking paper.
Place the sweet potato on the lined tray, sprinkle with salt and pepper and drizzle on a little olive oil. Roast in the oven for 30 minutes, or until the sweet potato is tender. Set aside to cool.
Transfer the sweet potato to a bowl and mash.
Add the lentils, lemon juice, paprika, cumin, cayenne pepper, flour and coriander, sprinkle with salt and pepper and mix thoroughly. Shape into six patties.
Drizzle a little olive oil over the lined tray, then add the patties.
Bake in the oven for 15 minutes, flip over and bake for a further 15 minutes, or until lightly browned.
Scatter coriander leaves over your sweet potato and lentil patties and serve with burger buns and yummy veges or with any salad.
