With the automation of whitefish bone detection and removal, FleXicut greatly reduces the need for skilled labour and improves product handling and overall yield.

The bones in whitefish are notoriousl­y difficult to locate and remove, using the manual V-Cut to remove the pinbones six to 10 per cent of the fillet is also removed. With FleXicut, cutting out less f lesh on the V-cut leaves more on the loin – the most valuable part of the fish.

Equipped with high resolution 3D X-ray and two water-jet cutters, Marel’s FleXicut incorporat­es two critical processing steps in one machine – it precisely locates the pinbones and then cutting the fillet to remove them.

The FleXicut uses the latest X-ray technology to locate bones with extremely high accuracy, down to 0.2mm pinbones. Determinin­g the orientatio­n of the bones is critical in order to cut out less f lesh and leave more on the loin.

The water-jets for the bone removal process are very f lexible, enabling the FleXicut to perform a variety of cutting patterns.

The angle cutting option allows it to follow the curved lines of the bone frame very closely, thereby further reducing pinbone material. This means significan­t yield gains in the loin. FleXicut is also equipped with a built-in blade cutter, to optionally cut the tail piece.
