Chablis is all about Chardonnay, a delightful drop with a delicate taste that runs the gamut from int to citrus, depending on which side of the valley you visit. Aside from being a lovely little town with a huge reputation for wonderful wine, it also o ers one of the best dining experience­s in France — without breaking the bank.

Our top suggestion is a meal at Au Fil du Zinc, a restaurant housed in an old water mill with a river running beneath it. It’s the brainchild of Japanese chef Ryo Nagahama and his associate Fabien Espana, who you’ll meet front of house. Using fresh, seasonal produce, Nagahama’s cleverly constructe­d dishes bring together the avours of Japanese and French cuisine.
