Chablis is all about Chardonnay, a delightful drop with a delicate taste that runs the gamut from int to citrus, depending on which side of the valley you visit. Aside from being a lovely little town with a huge reputation for wonderful wine, it also o ers one of the best dining experiences in France — without breaking the bank.

Our top suggestion is a meal at Au Fil du Zinc, a restaurant housed in an old water mill with a river running beneath it. It’s the brainchild of Japanese chef Ryo Nagahama and his associate Fabien Espana, who you’ll meet front of house. Using fresh, seasonal produce, Nagahama’s cleverly constructed dishes bring together the avours of Japanese and French cuisine.
