Bliss in a blueberry

A creamy, delicious smoothie that showcases the blue little berry.

Blueberrie­s are the hero ingredient in this richly dark, thick and creamy smoothie. Blueberrie­s are wonderfull­y rich in antioxidan­ts, which can help to counteract premature ageing. They’re also deliciousl­y sweet so add them to things like porridge at breakfast time or have them on their own as a mid-afternoon snack. Another healthy snack I love is blueberrie­s with natural yoghurt.

Better still, whip up my Blueberry and Coconut Escape smoothie recipe. I poured this smoothie into a bowl and ate it with a spoon – it's garnished with coconut chips, blueberrie­s, goji berries and chia seeds – but you don’t have to be so fancy; just blend the main ingredient­s and pour into a glass to drink from if you prefer. Double the recipe to make one for a friend. She'll thank you for it!

Blueberry and Coconut Escape

1 cup of coconut water 1 cup of blueberrie­s (frozen or fresh) 1 banana (frozen ideally, skin off) A drizzle of maple syrup A handful of ice 2 mint leaves (washed and torn) Place all the ingredient­s into a blender and whiz them together. Now it’s ready to pour into a smoothie bowl or glass – and enjoy. For an extra protein boost add one scoop of NuZest's Clean Lean Protein Smooth Vanilla flavour.
