Healthy Sweet Potato Fries

with homemade garlic aioli

I make these fries often at home during the week because they are really quick and easy. I often leave the skin on the sweet potato, either way they are delicious.

Serves 4 Preparatio­n time 10 mins Cooking time 20 mins

Sweet Potato Fries

4 large sweet potatoes 1 sprig fresh rosemary 1 sprig fresh thyme 1 tablespoon olive oil 1 teaspoon sea salt

Garlic Aioli

2 egg yolks 2 garlic cloves, crushed 1 cup olive oil 1 tablespoon lemon juice Salt to taste

Preheat the oven to 180 degrees celsius and line a baking tray with baking paper. Peel the sweet potato and cut lengthwise into chips. Place them on the baking tray and toss through the olive oil, rosemary, thyme and sea salt. Bake for 20 minutes or until the sweet potato is cooked through.

To make the garlic aioli place the egg yolks and crushed garlic in a food processor or blender and blitz until combined. Turn the machine down low and while the motor is still running slowly, add the olive oil. The mixture should become a thick mayonnaise. Add the lemon and salt and stir through. Refrigerat­e until chilled.
