Prawn and Butter Lettuce Wrap with Apple Horseradis­h Sauce

As the end of the year nears, I thought what better way to “wrap it up” than to share some amazing flavour combos for wraps. Wraps are a really versatile meal, easy to pack up and take on picnics, great for school and work lunches or just sliced up and served on a platter as a canape. All cultures have some form of wrap; the Indian roti, Middle Eastern pita, Mexican tortilla but, today my friends, we’re going to do it my way. 2 granny smith apples, peeled and cored

1 Tbsp horseradis­h

180g punnet of cherry tomatoes ¼ cup coriander leaves Juice of a lime 1 Tbsp extra virgin olive oil 1 Tbsp butter 300g prawn cutlets 4 wraps 8 butter lettuce leaves (or baby gem, cos)

½ telegraph cucumber, sliced into batons

Slice the apples and place into a small pot, add 1 Tbsp water and cook slowly until soft.

Place the apples and horseradis­h into and blender and process until smooth then set aside.

Quarter the cherry tomatoes and place into a bowl and add the coriander, lime juice and olive oil. Mix to combine, season with salt flakes and pepper and set aside.

Heat a fry pan, add the butter then saute the prawns until just cooked.

To assemble the wraps, place the wraps on a clean bench, layer up the lettuce, cucumber, prawns, and tomatoes and then top with the apple horseradis­h sauce.

Roll up tightly and wrap as desired.

Serves: 4 Prep time: 15 mins

5cm piece of ginger (peeled) 1 Tbsp tamari (or soy) ¼ cup water Juice and zest of a lime ¼ cup almonds 1 spring onion

½ to 1 chilli (depending on your palate) 1 Tbsp extra virgin olive oil

1 tsp sea salt flakes

4 wraps

1 baby gem lettuce

1 smoked chicken breast (about 300g), sliced

2 avocados, sliced

1 cup crispy noodles

Into a blender or high-speed bullet place the ginger, tamari, water, lemon, almonds, parsley, olive oil and salt. Blend till smooth and, if required, adjust the consistenc­y with a little extra water. Set the dressing aside.

To assemble, place the wraps on a clean bench, layer up the lettuce, smoked chicken, avocado, crispy noodles and drizzle over the dressing.

Roll up tightly and wrap as desired.
