2 CARROTS

1 TABLESPOON MELTED COCONUT OIL SALT TO TASTE • Preheat the oven to 200ºC

• Slice your carrots into thin wheels or use a vege peeler to make long shavings. Toss in a bowl with melted oil until evenly coated.

• Arrange in a single layer on an oven tray

lined with baking paper.

• Bake for 10-12 minutes, watching carefully. Thinly sliced carrots can turn from crispy to burnt in seconds! Remove from oven, sprinkle with salt and eat them as soon as they have cooled.
