Waffles with Grilled Peaches & Honey Cream
Waffles:
❚ 250g plain flour
❚ 1⁄2 tsp salt
❚ 3 tsp baking powder
❚ 1⁄2 tsp ground cinnamon
❚ 2 eggs, separated
❚ 400ml milk
❚ 1 orange, finely grated zest
❚ 100g butter, melted, plus extra for greasing
Peaches:
❚ 6 ripe golden-fleshed peaches
❚ 3 tbsp butter, melted
❚ 1⁄2 tsp vanilla extract
❚ 2 tbsp liquid honey, plus extra to drizzle
Cream:
❚ 300ml cream
❚ 1 tsp vanilla extract
❚ 1 tbsp liquid honey
Waffles: Sift together flour, salt, sugar, baking powder and cinnamon into a large bowl. Lightly beat egg yolks with milk and add to dry ingredients with orange zest, mixing to a smooth batter. Stir in melted butter.
Beat egg whites to stiff peaks and fold into the batter. (The batter can be made several hours ahead; cover and keep in a cool place.)
Peaches: Cut peaches into slices, discarding stones. In a bowl, combine butter, vanilla and honey. Add peaches and toss to coat. Oil a preheated grill pan (or barbecue) and place the peaches cut side down on the grill. Cook 3-4 minutes or until caramelised then turn and repeat on the other side.
Honey cream: Beat cream until just starting to thicken. Add vanilla and honey and continue to beat until thickened.
When ready to serve, cook batter in a waffle pan following the manufacturer’s instructions, keep them warm in the oven.
Serve warm waffles with a good dollop of cream, peach wedges and a drizzle of honey.
Makes about 12 waffles.
