Watermelon drinks and dessert

A smoothie: purée 3 cups of chilled watermelon chunks, several spoonfuls of yogurt, a spoonful of honey, half a glass of almond or regular milk and a squeeze of lemon juice.

A delicious cocktail: combine 1 cup of puréed watermelon, ice cubes, a generous slosh of rum, some crushed mint leaves and a teaspoonfu­l of sugar.

Lemonade: whizz 2 cups of watermelon cubes, the juice of 2 lemons, 4 tbsp of sugar and 1 cup water in a blender or food processor. Serve over ice.

Refreshing ice blocks: purée 3 cups of watermelon, then add ½ cup yogurt and 2 tsp of sugar. Set in a large iceblock tray with little ice-cream sticks inserted.

A simple dessert: cut watermelon into cubes and spike with a little vodka. Serve with slightly sweetened greek yogurt or whipped cream.

A tropical fruit salad: combine plenty of watermelon cubes, sliced banana, cubes of papaya and mango, a sprinkling of sugar, and coconut threads. Serve with coconut cream. Keep the watermelon cubes and salmon slices cold.

Cut the bocconcini into 1cm slices.

Wash the mint, then remove the stalks. To assemble the bites, stack a bocconcini slice on top of a watermelon cube. Wind a salmon slice around each stack, then tuck in a mint leaf. Push a skewer through each bite to hold it together.

Serve chilled.
