Oh kale yeah!

Kale is a very popular vegetable at the moment as it is very nutritious. To be honest, I’ve never enjoyed it in salads because it is quite tough and dry, but I find that if you chop it finely, then pour some lemon juice and olive oil over it then massage it, your salad will be much more tender. I leave my kale in the fridge with its lemon and olive oil mix overnight, then give it a few more massages the next day and it is wonderful by dinnertime.

Kale is very easy to grow, and it adores winter and a good frost. So now is the time to grab some seeds or seedlings and get them in the garden. My favourite is cavolo nero but I was also excited to find some seeds from Koanga Gardens which are a cultivar developed by the Land family in the Hokianga where I live, so I’m thrilled to be growing a local kale.
